Simple Make-Ahead Breakfast Casserole


When it comes to my recipes, I’m a sucker for quick and easy. We all know this. I’m also a lover of casseroles. That might be new and surprising to you, since casseroles aren’t in muffin form. Ha! When your life is incredibly hectic, and you don’t have the time to spend hours in the kitchen, casseroles are ideal. This breakfast casserole definitely isn’t “clean” or “healthy”, but it is hearty, and should last your family the entire week. Like most things that I make and share with y’all, this reheats well and can be made the night before. I was in and out of the kitchen in 30 minutes.

You will Need:

  • 1 Can of Biscuits
  • 8-10 Eggs
  • 1 Package of Sausage (or your breakfast meat of choice: Bacon, Ham, no meat…anything you want!)
  • 1-2 Chopped, Seasoned, and Cooked Potatoes
  • 2 Cups of Shredded Cheese

-Preheat your oven to 375°
-Brown Sausage in skillet, drain; set aside
-Chop and cook potatoes in the same skillet, season as desired–set aside in a bowl lined with a paper towel to drain excess grease
-Spray a 9×11 or 9×13 baking dish with non-stick cooking spray
-Line biscuits in bottom of dish and smoosh so that they’re semi-connected to each other (this is optional…you can just slap them in there all willy nilly)
-Spread sausage evenly over biscuits
-Crack 8-10 eggs into a bowl (add optional splash of milk), whisk, and pour over sausage
-Spread potatoes evenly over egg mixture
-Top with cheese
-Bake in the oven for 25-30 minutes, or until knife inserted into dish comes out clean

Of course, you can serve right then and there. I normally pop the lid on it and store in the refrigerator on Sunday night and reheat all week.

Some fun toppings to think of adding: frozen hashbrowns or tater tots, bacon, spinach, french toast instead of biscuits… you can do so many things!
