Make Ahead Sweet and Savory Sheet Pan Pancakes

Before moving to Tennessee, my husband and I called a few places home…one of those being Fresno, California. Fresno has a wide variety of delicious options to choose from when it comes to food. Actually, I have a list of restaurants and hole in the wall places to visit whenever I’m in town. I found one of my absolute favorite breakfast spots of all time when I lived there, Batter Up Pancakes. It’s one of those breakfast places that’s only open until 1 or 2, and you have to get there early if you don’t want to stand outside waiting in line for an hour. But, the wait is worth it. They make this amazing stuffed pancake called The Intimidator, which is a Buttermilk Pancake with Scrambled Eggs, Bacon, Sausage and Ham COOKED INSIDE THE PANCAKE. If you’re ever passing through Fresno, I highly recommend checking them out for breakfast.

I decided to make my own spin on their pancakes. These pancakes are a little different, as they’re sheet pan pancakes! Quick and easy, and able to be frozen and reheated. Y’all already know that I love recipes that are quick, easy, and family friendly.

There are TWO recipes in this post, because I thought that I should incorporate sweet and savory. So, one recipe to satisfy your sweet tooth, and one that’s really hearty and filling. I hope that you enjoy them a much as we did! SHEETPANPANCAKES

The first recipe that I have to share is the Sweet Sheet Pan Pancakes. These pancakes are stuffed with strawberries, bananas, and chunks of cream cheese. It’s incredibly sinful and delicious. You don’t even need syrup for these, but you can totally add some. It’s super versatile, and can be changed to incorporate your favorite fruits…try a mix of berries, maybe add in some sliced almonds. For even more fun, try adding some chocolate chips, swap cream cheese for peanut butter, or maybe honey!

The next recipe is the Savory Sheet Pan Pancakes. I didn’t stuff them as much as Batter Up does, but you totally can! These are really filling, and even more delicious when topped with some syrup. What I love about these is how versatile they are…swap sausage for bacon, add in some home fries, hashbrowns, spinach, cheese, whatever you can think of!
