Kid Friendly Waffle Bacon Grilled Cheese

As a self-proclaimed “foodie”, one thing that I always associate Fall with is comfort food. Warm and filling food that just hits the spot. This time of year, I love breaking out my crock pot and adding new twists to classic comfort food recipes. While I’m not using my crock pot today, this recipe has an awesome kid-friendly (and approved) twist on a comfort food classic–the grilled cheese.

Grilled Cheese is one of those foods that just always sounds good, and I don’t think that I’ve met anyone who doesn’t like some form of grilled cheese. It’s such a versatile food, and you can pretty much customize it any way you want. I thought that it would be really fun to use one of my son’s favorite things, waffles, instead of bread to create a really delicious bacon grilled cheese sandwich.

My son has recently become quite vocal about wanting to help me in the kitchen, and I try to make things as kid-friendly as I can in there so that he’s able to. Whether I let him stir a bowl of random ingredients or assemble his sandwiches, I think it’s important for him to learn his way around the kitchen early so that when he’s older he can make some simple things by himself. Plus, I love that he wants to spend time with me because I typically slave away in the kitchen alone.

He already regularly requests Kellogg’s® Eggo® Mickey Mouse Homestyle Waffles in the mornings (this is probably our 10th box since we found them in store if I’m being honest–they’re just so easy to pop into the toaster), so he was super excited to see that we were having them for lunch. I think that any fun shaped food instantly makes kids more willing to try food, so these definitely pass the test of picky eaters.

Ingredients:

Kellogg’s® Eggo® Mickey Mouse Homestyle Waffles
-Thick Cut Bacon
-Yellow American Cheese (or whichever you prefer)
*Optional* Tomato Soup, for dipping

Instructions:

This one is super simple and quick–perfect for really hungry kiddos
-Cook your bacon using your preferred method (to save time, I used the microwave).
-Set bacon aside on a paper towel to absorb excess grease.
-Toast 2 waffles in toaster.
-Assemble your sandwich, Waffle, Cheese, Bacon, Cheese, Waffle (or however).
-Using a skillet on medium heat, add in butter or non-stick cooking spray and then add sandwich.
-Brown on both sides, turning occasionally to avoid burning, until cheese is melted and gooey.
If you “accidentally” made any extra bacon, you can eat that now.
-Cut in half (or don’t), and enjoy!
