Better Than Takeout Beef Fried Rice with Homemade Yum Yum Sauce

One of my favorite things about the weekend, is that I get to have my husband home. Typically, we either make a delicious meal together or get take out (usually Chinese Food), and plan a date night in with a movie. Since we’re planning on buying our first home within the next few months, we’ve really tried to cut down on eating out, and have opted to make more meals at home during the weekend. The last few weeks though, he has been mentioning how much he was craving fried rice, and how he wanted to try it with my favorite brand of microwave rice. I tinkered around and came up with this really delicious, better than takeout beef fried rice and paired it with homemade yum yum sauce. Am I the only one who is obsessed with yum yum sauce?

I really wanted to make sure that I nailed the flavors in this before I posted, and I’ve made it three times now, making sure it’s right. For our family, I do add a little bit more egg and veggies than your typical recipe. The kids love extra egg, and will eat any veggies in their “egg rice”, so I sneak as much in as I can.

For our protein, I chose beef for this meal. Feel free to choose whichever meat your family loves, you’ll be able to prepare it the same way.

For The Meat:

  • 1-2 lb Meat of Choice (We used Flank Steak)
  • Salt
  • Pepper
  • Onion Powder
  • Garlic, Minced (to taste..I use a lot of garlic)
  • Teriyaki Sauce
  • Butter, for searing/cooking meat

One of the first things that I did was marinate my meat in teriyaki sauce for about 30 minutes, then I liberally seasoned it, rubbed that in, and let it “brine” for another few minutes. Get your skillet hot and add some butter to melt. I cooked our meat until done, which is medium-well around here…if not completely well done. But, if you use steak, cook it to your liking! Once it’s finished, give it a few minutes to rest before you slice into it. You can do either strips or bite sized pieces for this.

While my meat was cooking, I cooked my rice and I chopped and prepped all of my ingredients and got started on that, so that everything would be done around the same time. I used my favorite rice, VeeTee microwavable rice, to save me time and add some convenience.

For The Rice:

  • 1-2 Tbsp Butter (Unsalted is Best)
  • 1 1/2 C Frozen Peas and Carrots
  • 1 Whole Yellow Onion, Diced
  • 3 Large Eggs, Whisked
  • 4 C White Rice, Cooked
  • 3-4 Tbsp Soy Sauce of Choice
  • 1 Tsp Ginger
  • 2 Tsp Garlic Powder
  • Dash of Red Pepper Flakes
  • 2 Tsp Onion Powder
  • 1 Tsp Chili Powder
  • 1/3 C Green Onion, for garnish

Start by adding butter to your skillet and melting it, then you can bump the heat up to medium and throw your white onion and veggies in. You want to saute those until the onions are translucent and the veggies are cooked. Then, move all of your veggies to one side and add in your egg. Let it sit for about a minute or two and then scramble it into your onions and veggies. Make sure to give it some nice stirs to make sure it’s all incorporated. Go ahead and add your rice, and again make sure you’re really mixing it all together. Pour in your soy sauce and your seasonings. Taste this as you go, so that you can control the flavor. The chili powder and red pepper flakes don’t make it spicy, but add a good bit of flavor to this dish. Personally, I like adding a little more onion/garlic powder and soy sauce..which is why I don’t have salt written down in the ingredients. Once you’ve plated it, garnish with some green onions.

If you’re like me and you love Yum Yum Sauce, here’s a quick and easy recipe to make your own. This goes amazing over fried rice, sushi, dipping seafood and steak in, etc. I like having a jar in my fridge at all times. You also probably already have all of the ingredients that you need to make it!

Homemade Yum Yum Sauce

  • 1 C Mayonaise
  • 2-3 TBSP Water
  • 1 TBSP Ketchup
  • 1 TBSP Sugar
  • Garlic Powder, to taste
  • Onion Powder, to taste
  • 1 TBSP Melted Butter
  • 1 TBSP Paprika

Mix all of these ingredients together and store in an airtight container. I added a little extra sugar to mine to make it taste more like the sauce that you get at Japanese restaurants. You can double this recipe too, if you want. Also, you can add some cayenne or red pepper flakes to make this spicy.

That’s it! This is quickly becoming one of my favorite meals. Next time I make it, I think I’m going to try chicken and shrimp instead of steak. I love that I can make something this delicious, that tastes like it came from a restaurant (but better), from my own kitchen

  • I wasn’t a huge fan of 2019, honestly. We struggled in a lot of ways, and I’m sure (I know) that some of that will trickle in to 2020 as well. But, we had some really great moments.
Like this one...seems simple and sweet but it’s probably one of my favorite days of 2019. We were randomly buying eggs at Sam’s...I was having an awful day and felt super depressed at all of the obstacles on our plate. I was even mad that my husband made me get dressed and leave the house.. When we got in the car to drive home though, we got the news that we were approved for our house! (Which I will talk more about as we start gearing up to move on the 16th). Having just one thing we were worried about taken off our plate was just what I needed that day. Just. What. I. Needed.

  • My favorite part of Thanksgiving? The leftover sandwich. I *might* even like it more than the actual Thanksgiving Dinner. 
I started with a thick slice of @saraleebread Artesano Bread (the original, but I bet the new brioche would be bangin’), then I placed some of the OG Ocean Spray canned cranberry sauce sliced thin and topped that with some leftover arugula from my charcuterie board. I smeared a hearty serving of mashed potatoes on top of that—with a little extra salt and pepper, strategically placed my turkey slices, and drizzled gravy over top. Closed it up with another thick slice of bread. 
I didn’t go all Ross with my moist maker slice of gravy soaked bread, but you totally could. I’m thinking of adding some melted brie over top of the one that I’ll be having today. 👀
