Philly Cheesesteak Sloppy Joe Stuffed Sweet Potatoes

August 22, 2019 in Food, Recipe, Recipes - No Comments

I absolutely love a good Philly. Whether it’s Philly Cheesesteak fries (the best ones I’ve found are at a little deli here in town), or the classic sandwich on a big hoagie roll, I can always be in the mood for one. It’s the perfect food… from the deliciously seasoned meat, the sauteed peppers and onions, and the gooey melty cheese. I decided to mix things up and make a Philly Cheesesteak Sloppy Joe, and then I stuffed a huge baked sweet potato with some of the mixture. The result was a really simple but flavorful dinner than my entire family enjoyed. I think yours will too!

Ingredients:

  • 2 TBSP Unsalted Butter
  • 1 lb Ground Beef (or meat of choice)
  • 1 Whole Yellow Onion, diced
  • 1-2 Green Bell Peppers, diced
  • 1/2 C Beef Broth
  • 3-4 TBSP Worcestershire Sauce
  • 2-3 TBSP Cornstarch
  • Salt, Pepper, Onion Powder, Garlic Powder, to taste
  • 4-5 Large Sweet Potatoes (one for each member of your family, so adjust as needed)
  • 8-10 Slices Provolone (Less if you want it less gooey)

Instructions:

  1. Preheat your oven to 425
  2. Scrub your sweet potatoes clean, and pat dry.
  3. Spray or Rub them with a little bit of cooking oil, poke a few holes into them with a fork, and salt, then wrap tightly in foil.
  4. Bake your sweet potatoes at 425 for 50-60 minutes depending on size. They’re done when you’re able to easily pierce them with a fork.
  5. Brown your ground beef over medium heat until no longer pink, removed from skillet and set aside.
  6. Add butter to pan. Once it’s melted, add in your diced vegetables and saute them for 6-7 minutes or until the onions are translucent and the peppers are nearly cooked through with a little crunch left. (This would be a good time to also add your mushrooms should you want to add those).
  7. Reduce your heat to low and return ground beef to the skillet, add all of your seasonings to taste and then add your Worcestershire sauce and beef broth. Combine well.
  8. Then, add your corn starch and stir until it’s dissolved. The corn starch will thicken the beef broth up a little bit to create a really yummy sauce. If your beef looks too dry, you can add 1-2 tbsp more of beef broth (or water). Scrape the bottom of your pan during this process to combine all ingredients thoroughly.
  9. Keeping heat on low, cover your mixture with the provolone slices. I like to use enough to completely cover the mixture and the skillet, but you can use less to lighten it up. Cover for a few minutes until the cheese gets gooey and melts into the mixture.
  10. Once your potatoes are finished, slice them open and scoop some mixture into it. Serve hot!

You can also use this mixture on top of buttered buns or hoagie rolls!

  • Over the weekend, we worked as a family on our #BuildThanks Project. We teamed up with @LowesHomeImprovement and I would love for you guys to join us! #LowesPartner⠀
⠀
All you have to do is create a message of love, hope, encouragement, and thanks for the people in your community who are facing this crisis head on every single day.
This can be anyone from healthcare workers and first responders to grocery store clerks and your local mail carrier and package deliverers. Or all of the above! ⠀
It is super easy to do, using items you already have around your home! For us—that was art supplies because we have baskets overflowing with things line construction paper, crayons, markers, etc. ⠀
⠀
This is a great way to spend some quality time engaging with your kids and inspiring some creativity, all while being able to support and thank your local community (from inside) for all of the things that they’re doing for us during this time. ⠀

  • It’s the weekend! ⠀
⠀
You know what that means! ...#StayHome and #FlattenTheCurve. ⠀
⠀
▪️(Thank you to all of the essential workers around the country who don’t have this luxury and are depending on us to do what we can to help.) ▪️ It’s scary, I know.
It feels isolating, I know. ⠀
It’s frustrating, I know. ⠀
You are craving some normalcy, I know. ⠀
⠀
But look, the sooner we all fall in line and do the *one thing* we know can work and stop the fast spread of this virus, the sooner we can get back to our usual routines. ⠀
⠀
We are all in this together...⠀

  • ☣️ STOP ☣️⠀
⠀
We have to act NOW to save lives. Listen up.⠀
⠀
While panic is never preferable- if that's what it takes for you to stay home and slow the spread, then maybe you need to get scared. ⠀
⠀
People are exponentially spreading this disease with no symptoms. We have all GOT TO STAY HOME. No more lunch with the ladies. No more playground meetups. ⠀
⠀
STOP IT ALL IMMEDIATELY. SHUT IT ALL DOWN.⠀
⠀
There are otherwise healthy children and young adults on *limited supply* ventilators right now. This virus is brand new to the entire world and it is ravaging people's bodies in unexpected fatal ways- and no, not just the elderly or compromised.⠀
⠀
Math is math. We are already projected to run out of lifesaving equipment and supplies very quickly. ⠀
⠀
This is not media hype, this is not a hoax, this is real. It may be easy to forget that we are in the middle of a dangerous pandemic while the sun is out, traffic is light, and you are off work.⠀
⠀
There are no sirens going off or bombs exploding in your front yard, but I can promise you that we are in a very real crisis. However, we have SOME control.⠀
⠀
The longer we wait and the more we continue to socialize with each other and expose ourselves in public the longer we will be stuck in isolation, the longer people will be out of work, the longer our children won't have school, the longer our economy will suffer.⠀
⠀
Keep in mind that Wuhan did a very tight lockdown and they have STILL been quarantined for two months now and cannot lift the quarantine until they have gone 28 days without a new positive result. The US government has been very lax in comparison and this will not bode well for us if we don't do better NOW.⠀
⠀
This won't last forever, but our future WILL look a lot different based on the choices we make. ⠀
⠀
Just because the government did not force you to stay home or because your favorite restaurant, store or salon has chosen not to close does not mean you should leave your home.⠀
⠀
➡️*obviously this is intended for people who are VOLUNTARILY not staying home.*⬅️⠀
WORK. ESSENTIALS. HOME. THAT SHOULD BE IT!⠀
⠀
DO YOUR PART. ⠀
STAY HOME. ⠀
SAVE LIVES.⠀

  • Well. This wasn’t what I was going for today #creativeathomechallenge. It’s been pretty chilly haha...puns (don’t let that beautiful sky deceive you) and my plans to get a picnic together for lunch this afternoon were ruined. Maybe I can do that finally on back yard day 😂😂
Trying to support businesses and third party delivery services like Door Dash and their drivers—they now offer contact free deliveries, which is greatly appreciated to get a mild feeling of normalcy, one of my favorite dinners. It’s something small and easy that you can do if you’re able. Some of these DD drivers are relying solely on people to still order so that they can make money. #stayhome #flattenthecurve #slowthespread
